Herb-Crusted Grilled Chicken with Lemon (So Juicy!)

Grilled chicken doesn’t have to be boring. This herb-crusted version is packed with flavor from a simple marinade of fresh herbs, garlic, and lemon. The result? Incredibly juicy chicken with a gorgeous golden crust.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • Juice and zest of 2 lemons
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Combine olive oil, lemon juice, zest, garlic, herbs, paprika, salt, and pepper in a bowl.
  2. Add chicken breasts and marinate for at least 30 minutes (or up to 4 hours in the fridge).
  3. Preheat grill to medium-high heat (about 400°F).
  4. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F.
  5. Let rest for 5 minutes before slicing and serving.
