There’s a reason French toast has been a beloved breakfast for centuries. When done right, it’s custardy on the inside, golden and slightly crispy on the outside, with a warm cinnamon-sugar coating that makes every bite feel like a special occasion.

Ingredients

  • 6 thick slices of brioche or challah bread
  • 4 large eggs
  • 1 cup whole milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Butter for cooking

Cinnamon Sugar Topping

  • 1/4 cup sugar mixed with 1 tablespoon cinnamon

Instructions

  1. Whisk together eggs, milk, sugar, vanilla, cinnamon, and nutmeg in a shallow dish.
  2. Heat a skillet or griddle over medium heat and add a pat of butter.
  3. Dip each bread slice into the egg mixture, letting it soak for about 15 seconds per side.
  4. Cook for 2-3 minutes per side until golden brown.
  5. Sprinkle with cinnamon sugar while still warm.
  6. Serve with maple syrup, fresh berries, and a dusting of powdered sugar.

The secret to perfect French toast is using thick-cut, slightly stale bread. Day-old brioche or challah is ideal because it absorbs the custard without falling apart. If your bread is fresh, pop the slices in the oven at 300°F for 5 minutes to dry them out slightly.
